Today has been one of those days.
Not one of those days. 🙂
Just one of those DAYS.
One that requires this mama to wear lots of hats,
read lots of books,
listen to lots of little voices,
answers lots and lots of questions,
settle lots and lots of fusses,
clean up lots and lots and lots of messes,
issue lots of reminders,
kiss lots of boo-boo’s
and juggle lots of responsibilities.
Yeah, just one of those days.
A pretty normal day, come to think of it.
And definitely one of those days that calls for a quiet-as-possible-no-fuss-required evening.
It’s still warm right now in Texas, and that calls for minimal cooking in the kitchen; especially at the end of a typical school day like today.
This morning, I popped some organic, grass-fed beef (thank you, Aldi!) into the fridge to thaw… and all day, Sloppy Joe’s have been simmering on my brain.
Tonight, we’re pairing this Sloppy Joe sauce with the gluten-free hamburger buns my husband scored yesterday (again, thank you, Aldi!), a bag of organic tortilla chips, maybe a few organic “baby” carrots and Ranch… and miss Emily’s gluten-free brownies.
A fun variation: open-face Sloppy Joe’s with sprinkles piles of shredded Colby Jack or cheddar cheese on top. 😀
This recipe hails back to my childhood, and the many, tasty meals we enjoyed because of my Mom’s can’t-be-beat Sloppy Joe Sauce.
This is my spin on an old favorite.
It’s simple, quick, and calls for minimal cooking… for me, it’s just perfect for one of those days.
